Executive Chef

About the role

Hilton is seeking an experienced Executive Chef to lead culinary operations across multiple kitchen outlets, including pastry, main, Chinese, and executive club lounge. The role ensures the delivery of high‑quality food and beverage experiences that meet Hilton standards and delight guests.

Key responsibilities

• Oversee all culinary and stewarding operations across hotel restaurants and event venues.
• Plan, prepare, and execute menus, new dishes, and food presentations in line with recipes, standards, and plating guides.
• Maintain HACCP compliance and food safety throughout the operation.
• Develop and update training manuals, SOPs, and quality initiatives such as daily chef briefings.
• Manage inventory, purchasing, and cost control, including recipe costing and production planning.
• Collaborate with service teams, attend service briefings, and respond to guest requests promptly.
• Review rosters, ensure hygiene standards, and enforce proper sanitation of workstations.

Required profile

• Proven experience leading large‑scale hotel culinary teams.
• Strong knowledge of hotel occupancy forecasting, event planning, and menu development.
• Ability to adapt to changing business patterns and maintain high productivity.
• Excellent communication with service staff and ability to mentor section chefs.
